The Old Time Delight of Taiwan Since 2001 Kocha in Taiwanese Hokkien means ‘past’ or ‘previous’. It can be loosely defined as signifying the good times of the olden days. It is also a strong reflection of human kindness and strong camaraderie among the people living in that era. And so is the spirit of Kochabi Taiwan Cuisine – upholding and maintaining the original taste and value. In other words, Kocha is not only confined to ‘past’ and ‘previous; it’s all about trust and habit, in addition to quality satisfaction and perseverance towards tradition. It allows those staying in a foreign country to enjoy cooking like there is no taste like home. Food is no longer about taste anymore. It’s about experiencing the food culture and getting to know the connotation and value in it. Only then the society can move forward. Old is new.
